I love pho soup but we dont have any Vietnamese restaurants in Kodiak. So I did some routing around online and found an easy pho soup recipe that can be cooked up in about 30 minutes. Also, I dont own a tea infuser so I used a coffee filter to hold the spices and tied it shut with thread. It worked quite nicely. Here's the recipe, I forgot to take a picture, so I will update this the next time I make it.
Faux Pho Soup
Ingredients
• 5 cups chicken broth
• 1/2 onion, thinly sliced
• 5/8 ounces fresh ginger, 2- 1/2 inch thick slices
• 1 tablespoons fish sauce
• 1 1/2 cloves garlic, halved
• 1 star anise
• 5 whole cloves
• 1 large skinless, boneless chicken breast, trimmed
• 4 ounces rice stick noodles or udon noodles
• 1 green onion, sliced
• 1 or 2 limes, cut into wedges
• 1/2 cup fresh cilantro
• Sriracha Hot Chili sauce
• Soy sauce
• Red bell peppers sliced
Directions
1. Cook noodles according to the directions on the package, then drain and set aside in a large serving bowl.
2. Combine chicken broth, onion slices, fish sauce and chicken in a soup pot; bring to a simmer.
3. In a tea infuser, add the whole cloves, sliced ginger, garlic, star anise and place in the soup pot with the chicken.
4. Simmer the chicken, vegetables and spice mixture for about 30 minutes, until chicken is tender and cooked through.
5. Remove chicken and cool it until you can cut into small pieces, then place back into the simmering soup pot.
6. Remove the tea infuser, discard ingredients inside.
7. Ladle the soup into the large serving bowl with the noodles.
8. Add the red bell pepper, green onions, cilantro and lime. Drizzle in some sriracha and soy sauce.
